Zucchini Caprese Bake

  • 1 Zucchini, spiralized or cut into thin strips
  • 4 grape tomatoes, halved
  • 30g fresh mozzarella
  • Pinch salt and pepper
  • Pinch italian seasoning
  • Pinch red pepper flakes
  • Chopped basil for garnish


  1. Add spiralized zucchini to a ramekin and toss with salt.
  2. Put ramekin under broiler for 3-5min.
  3. Remove from oven and drain out water.
  4. Toss zucchini noodles with halved tomatoes, italian seasoning, red pepper flakes, and pepper.
  5. Top with fresh mozzarella.
  6. Put the ramekin back under the broiler until the cheese is golden and bubbly. Top with fresh basil.
