Zucchini Caprese Bake
- 1 Zucchini, spiralized or cut into thin strips
- 4 grape tomatoes, halved
- 30g fresh mozzarella
- Pinch salt and pepper
- Pinch italian seasoning
- Pinch red pepper flakes
- Chopped basil for garnish
- Add spiralized zucchini to a ramekin and toss with salt.
- Put ramekin under broiler for 3-5min.
- Remove from oven and drain out water.
- Toss zucchini noodles with halved tomatoes, italian seasoning, red pepper flakes, and pepper.
- Top with fresh mozzarella.
- Put the ramekin back under the broiler until the cheese is golden and bubbly. Top with fresh basil.
