Waffled Eggs

  • 2 egg whites or egg beaters
  • 30g pumpkin puree
  • 15g pancake mix (can be adjusted to fit macro needs or subbed with protein powder*)
  • 1/2 tsp vanilla
  • Sweetner to taste

*If using protein powder, add 1/2tsp of baking powder


  • Heat waffle iron.
  • Mix all ingredients together and pour into well-sprayed waffle iron.
  • Once done, remove from iron, add toppings and lots of syrup!

Tips: Make a savory version by adding greek yogurt instead of pumpkin puree and adding omelet toppings like msuhrooms, onions, bacon, and peppers!
