Lightened Up Pumpkin Dump Cake
- 100g Cinnamon swirl sugar free quick bread mix (I used Pillbury brand)
- 20g Cinnamon swirl sugar free quick bread cinnamon sugar mix (should come with the quick bread mix)
- 1 cup pumpkin purée
Cream cheese filling:
- 4 oz fat free cream cheese
- Splash vanilla extract
- Sweetener to taste
- 20g Cinnamon swirl sugar free quick bread cinnamon sugar mix
- Preheat oven to 350F
- Mix quick bread mix with cinnamon sugar mix and combine with pumpkin purée.
- Spread batter into 9×9 cake pan.
- Cream the stevia, vanilla, and cream cheese together. Scoop dollops on top of the cake batter.
- Sprinkle the remaining cinnamon sugar mix over the top of the batter.
- Bake for 38-40 min.
- Let cool completely before slicing, eating, and enjoying!
