Lightened Up Pumpkin Dump Cake

Ingredients 

Cake base:

  • 100g Cinnamon swirl sugar free quick bread mix (I used Pillbury brand)
  • 20g Cinnamon swirl sugar free quick bread cinnamon sugar mix (should come with the quick bread mix)
  • 1 cup pumpkin purée

Cream cheese filling:

  • 4 oz fat free cream cheese
  • Splash vanilla extract
  • Sweetener to taste

Topping:

  • 20g Cinnamon swirl sugar free quick bread cinnamon sugar mix

Directions 

  1. Preheat oven to 350F
  2. Mix quick bread mix with cinnamon sugar mix and combine with pumpkin purée.
  3. Spread batter into 9×9 cake pan.
  4. Cream the stevia, vanilla, and cream cheese together. Scoop dollops on top of the cake batter.
  5. Sprinkle the remaining cinnamon sugar mix over the top of the batter.
  6. Bake for 38-40 min.
  7. Let cool completely before slicing, eating, and enjoying!
