“Buffed Up” Protein Biscotti with Roasted Strawberries

Buffed Up Protein Biscotti with Roasted Strawberries

Ingredients

  • 144g (2 cups) strawberries, sliced
  • 120g rolled oats
  • 60g vanilla protein powder
  • 64g (2 servings) crunchy peanut butter
  • 21g (1 serving) honey
  • 40g water
  • 1 tsp baking powder

Directions

  1. Preheat oven to 350F.
  2. Spread strawberry slices onto a parchment-lined baking sheet and roast for 30-40 min.
  3. While the strawberries are roasting, pulverize 90g of the oats into flour and combine with the remaining whole oats, protein powder, peanut butter, honey, and baking powder.
  4. After letting the strawberries cool, fold them into the biscotti mixture BEFORE adding any water (the mixture gets somewhat sticky after water is added, so it is difficult to fold in strawberries at that point).
  5. Add water until all of the dry ingredients are just combined.
  6. Separate mixture into two portions on a baking sheet and shape however you’d like, sure to leave the dough about 1/2-3/4 inch thick.
  7. Bake at 350F for 20-25 min.
  8. Cool for 10 min, then with a serrated knife, cut the portions of dough into 8 strips total.
  9. Turn the strips on their sides and bake for another 5-8min, repeating on the other side to give the biscotti a nice crunch!
  10. Let the biscotti cool (this is the hardest part, I know), and mix half a scoop of vanilla protein powder with stevia and add water slowly until you have a thick glaze.
  11. Drizzle the glaze over the biscotti and let set at room temp, or chill them, or freeze them, or just dig in and enjoy!
